Banana Bread

It’s been a while since my last post, because I’ve been going to the gym and eating properly in an attempt to look fab for Coachella! Cupcakes and cakes are not part of the fab Coachella body plan… hence it being all quiet on the blog front. However, there were a bunch of bananas going brown in the house so I decided to make my never fail banana bread recipe. It’s super easy and very fast to make.

Adapted from the Joy of Cooking

Have all ingredients at room temperature.

  • 1 1/3 cups flour
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 5 1/2 tbsp unsalted butter
  • 2/3 cups sugar
  • 2 large eggs, lightly beaten
  • 1 cup mashed ripe bananas (about 3 bananas. The browner they are the sweeter the bread will turn out)
  • coarsely chopped walnuts (optional)

Pre-heat the oven to 350°F and grease a loaf pan.

In a medium bowl, mix the flour, salt, baking powder, and baking soda.

In a large bowl, mix the butter and sugar until light and fluffy. Add the flour mixture slowly. The texture will resemble coarse salt.

Gradually add in the eggs. Using a spatula, fold in the bananas and walnuts until just mixed.

Banana Bread BatterPut the batter in the loaf pan and bake for 50-60 minutes, the loaf is ready when you stick a toothpick in and it comes out clean. Let the loaf rest for 5 minutes before taking out of the pan, then let it cool for another 10 minutes. Then slice and enjoy!
